In a few days it is Father's Day, or rather, the day of St. Joseph. In Sicily it is customary to the cook for this event the sfinci, a fried dough covered with powdered sugar or cream filling.

Ingredients for the douugh
250 gr. di flour 00
250 gr. of water at room temperature
6 gr. salt
grated rind of one lemon q.s.
lard or oil for frying
Heat up the water with a pinch of salt, sugar and lemon peel.
Once brought to the boil, add the flour, lard and eggs, stir vigorously until the dough comes away from the edges. Put on the fire seed oil and when ready,
throw the mixture a tablespoon at a time. This will create the balls that will be ready soon reach the gilding. Take absorb the oil on paper towels. Abound with icing sugar and sfinci St. Joseph's are ready to be eaten.
In some parts of Sicily, are complemented by the creamy filling, that is a typical cream ricotta cheese and sugar with chocolate chips, but there are also more modern variants with custard or cream hazelnut.
